Today we have a delicious recipe for Chile Con Queso that is sure to knock your socks off. If you came to Eastgate Pools anytime over the Anniversary Sale weekend at the end of April you probably saw a lot of cooks outside using the Kamado Joe smokers and Swiss Grills. One of the guys grilling was our regional representative for Kamado Joe, Toby Burke. Toby grilled a lot of different delights but one of his treats stood out so much that a customer called in for the recipe. I am excited to share with our blog viewers this delicious recipe today. Toby’s Smoked Chile Con Queso
One Kamado Style BBQ Grill (Preferably Kamado Joe®)
If you don’t have a Kamado grill then you can use a Gas Grill (Preferably Swiss Grill®.)
If Charcoal use LUMP style charcoal or Wood Chips or Chunks for the smokey flavor.
If Gas Grill use one of the Stainless Steel Smoker Boxes available at Eastgate Pools & Spas.
Of course you can also cook the Con Queso in an oven.
Just DON’T prepare in a Micro Wave.
One Block of White Velveeta® (Queso Blanco)
One Can of Rotel® tomatoes (hot)
One Can of Rotel® tomatoes (medium)
One bag of shredded or grated Sharp Cheddar Cheese
Start your charcoal fire – do not use lighter fluid!!
Cube the Velveeta® and place in a ceramic style casserole baking dish
Pour the two cans of Rotel® on top and mix around a little bit. No need to get carried away with mixing it up.
Once your coals are lit place the dish in to the grill, The coals do not need to be fully lit.
After the mixture begins to get heated up a little then spread the cheddar cheese over the top of the dish and sprinkle the Smoked Paprika over the top.
Cook long enough for the cheddar to bubble up and brown a little bit.
You can re-heat the dip up periodically or place over a chafing dish to keep warm.
Great to use Day Two on Scrambled Eggs !!

This is what is going on right now at our Annual Anniversary Sale. Not even a little rain can stop us from grilling for all of our amazing customers.
Here’s a couple of photos to show you our setup today. We have our Kamado Joe Rep, Toby, grilling on two Kamado’s and, as we do every year, we have our weenie wagon grilling up hot dogs, brats and metts. So, come on down to rake in the savings and have some delicious barbecue on us.
Ever notice the curvature that graces the front of our store? The brief history of this building is that it used to be an 84 Lumber, and the curved area outlined an open-air overhang. We did an addition twenty years ago and enclosed that overhang area. The old wall used to be where the row of four pillars are that separate the billiard from hot tub departments and the front counter from the furniture areas. And the entrance to the store was right in the middle where the Boca Patio Furniture is currently located. If you came to Eastgate Pools before the addition, you would find a series of above ground swimming pools under the front overhang. In fact, the front desk areas and big sections of the billiard departments were underwater at one time because these pools were filled.
Perhaps you even shopped at the old 84 Lumber before we were here and remember our original store about a half-mile away. It was next to the Midas right off 32. Tiny! My have times changed.
Balloons are getting blown, the weenie wagon is getting assembled and the sales are starting to add up as we prepare for our annual Anniversary sale. 33 years in a row we have brought out the big sales to start up your pool season and we invite you down for the 34th installment coming April 25th, 26th & 27th. We will have door prizes and, as always, we will have food but this year we have an added twist.
This year we will have the one and only G-Willie at the store doing cooking demonstrations on Saturday the 26th. He will be serving up his award winning competition ribs as well as samples of all his sauces. We brought in his sauces because they recently won 1st prize at the Scovie awards and we simply could not stop eating the sauce as it is delicious. Come on in and grab some grub next weekend or grab yourself a jar of his delicious sauce.
Please make us a stop on your route next weekend while you are out shopping and come celebrate 34 years of excellence. We are happy to give you some delicious barbecue and have a ton of great deals for you to take advantage of and who knows, maybe you’ll win a shopping spree.
